Spicy Noodles with Beef Satay Stir Fry

Getting back to some of my Asian roots here with this lovely (delicious) dish of beef stir fry with XO satay sauce. This is another dish I haven't made for a while... since my college days.


Just recently I'm beginning to dig those old recipes up and remaking them again so that I can officially write them down somewhere. In the past these were all kept locked up in my head for safe storage... but as "old" age is starting to get to me, I think it's best that they be written down for future references now.


My choice of beef cuts here could've been better because it came out a little tougher than I'd like. It has been awhile since I've made it, so maybe I'm just rusty. All that chicken and turkey cooking, I have forgotten how to deal with my favorite beef counter part. Flavor was excellent and exactly as I remembered it to be. Originally I was going to complement this dish with rice but due to time constraints (because I didn't want to deal with having to dig out my rice cooker from the deep dark corners of my cabinets) I went with noodles instead. Regardless, noodles worked just as well.
